Specialist Notes

First work: first Venetian edition of the work, initially published in Turin in 1766. The author, an anonymous Piedmontese cook, proposes a work of updating Piedmontese cuisine, updating it in the French way. It is a refined and revolutionary research that favors taste over the scenographic aspect.
